Bacterial control can be divided into few part :
A. Air flow : use air supplier make positive pressure environment, also filter the air by HEPA filter while the air passing by the filter. Use space UV light to disinfect environment.
B.Tools disinfected :Use pot rack to save space and dry the tools after cleaning, and it’s better if using sterilization to disinfect and store tools, it is also be fine if grilled / blanch by hot water, but avoid to wipe by dry cloth.
C. Food flow : how to avoid cross-contamination while food transporting? One of the solutions is do not allowed trolley of cooking area go into packing area.
D. Staff flow : Control traffic flow by single direction door with clear sign to avoid human error.
